Mussels in Red Curry & Coconut.

  • 2 lbs Mussels – Scrubbed and De-Bearded
  • 3 tsp Chopped Ginger
  • 2 tsp Toasted Sesame Oil2 cans of Coconut Milk
  • 3 cloves Chopped Garlic
  • 1 tbs Thai Red Curry Paste
  • 1 small Minced Onion1 Chopped Tomato
  • 1 tbs Chopped Thai Basil
  • 1 tbs Thai Fish Sauce
  • 3 tsp Piha Manzano Chilli Sauce (Piha Hot from our west.)

Nothing is better than fresh seafood when its well presented and nutritious. The cast of Sparctcus would always go for seconds with this delicious seasonal lunch meal. Its light on carbs but tasty and hearty with loads of trace minerals and heat to pick up the beats for the afternoon setups. Green Lipped mussels are renowned for their arthisis fighting property and they have favourable effects on brain function. In fact actors feed with Doof Doof mussels are less likely to forget their lines, in our experience.



In a deep pan or dutch oven saute the garlic, ginger and onion in the sesame oil until soft. About 2 minutes. Ok now add the coconut milk, curry paste, tomatoes and fish sauce. Simmer for 20 minutes. Check the simmering broth has cooked through. Add the mussels and cook until they open about 1-15 minutes. Now you are ready to add the basil and stir.

Place mussels in bowls with some broth poured over mussels.

Garnish with a wedge of of Lime and a few sprigs of Coriander. Serve with Crusty Bread or baked potatoes with sour cream.
