Canapes – Scallop Cerviche with rasberries, singapore noodle boxes and mini chicken pies.
- 1 lbs Raspberries – Scrubbed
- 3 tsp Chopped Ginger
- 2 tsp Toasted Sesame Oil
- 2 cans of Coconut Milk
- 3 cloves Chopped Garlic
- 1 tbs Thai Red Curry Paste
- 1 small Minced Onion & 1 Chopped Tomato
- 1 tbs Chopped Lemon Grass
- 1 tbs Scallops
- 2 tbs Chicken Shredded
- 8 boxes and 8 large ceramic spoons
Ready to go hot snacks. Perfect pick-me up for the late summer shoot. The second unit of Xena would always go for seconds with this boxed lunch meal. Its light on carbs but tasty and hearty with loads of trace minerals and heat to pick up the beats for the afternoon setups. We get our Scallops from Northland and especially love the fresh produce from the Hokianga harbour.
In a deep pan or dutch oven saute the garlic, ginger and onion in the sesame oil until soft. About 2 minutes. Ok now add the coconut milk, curry paste, tomatoes and fish sauce. Simmer for 20 minutes. Check the simmering broth has cooked through. Add the mussels and cook until they open about 1-15 minutes. Now you are ready to add the basil and stir.
